Butternut, White Bean and Kale Soup

Vegan Butternut, White Bean and Kale Soup in the Pressure Cooker

Just another soup that I threw together really quick. My baby has been sick and will not let me put him down AT ALL. Somehow I was able to chop this stuff and throw it into the Instant Pot while he slept in the Ergo. Gotta do what ya gotta do, right? 


Butternut, White Bean and Kale Soup

3 cups cooked white beans (2 cans drained)
3 cups kale, stemmed and chopped
4 cups cubed butternut squash
4 stalks celery, sliced
1 head cauliflower, cut into bite sized pieces
1/2 cup chopped onion (I use the white part of green onions)
5 cloves garlic, minced
8 cups vegetable broth
1 Tablespoon fresh rosemary chopped fine 
salt and pepper to taste
lemon wedges

Put everything in the pressure cooker except the lemon wedges, salt and pepper. 
Cook at high pressure (that's the regular pressure rather than low) for 8 minutes with natural release for 10 (then manual release if necessary after that.) Stir and add additional salt and pepper to taste. Then take out a couple of cups and blend it OR use your trusty immersion blender and blend it a bit. It makes it creamier and oh so lovely. Serve with some lemon wedges to squeeze over to brighten the flavors at the table. 

Serving size: 1 & 1/2 cup  -  3 WW points

Spiced Butternut Lentil Chili

So I'm totally in love with the Instant Pot electric pressure cooker! I went grocery shopping and oh crap now its late and I need to make dinner. Sure we could have something like a sandwich but nah I wanted chili. CHILI?!?! With dinner already being late? And no beans cooked. And nothing ready. Yeah dude, chili. Chop everything up, throw it in the pot, cook for 10 minutes (cool for 10 minutes) and boom CHILI!!!!!!!!!! 
The chili is spiced with some stuff you may not put in your chili but do it this time. You won't be able to tell "HEY THIS IS REALLY CINNAMONY" (it's a word) but you will be like  "woah that's a nice spicey warmy chili bowl!" 

Vegan Spiced Butternut Lentil Chili

Spiced Butternut Lentil Chili 

5 c cubed butternut squash

1 bell pepper chopped
5 green onions, chopped
5 cloves garlic, minced
1 tsp ground ginger
1/2 tsp cinnamon
2-3 tbsp chili powder (I use salt free) 
1 tsp cumin
1-2 chipotles in adobo, minced
1 c dry brown lentils
1/2 c dry red lentils
5 cups veggie broth
2 tbsp tomato paste
1 can diced tomatoes
1 tsp salt, plus more to taste
Serve with limes, cilantro and avocado

Cook at high pressure (that's the regular pressure rather than low) for 10 minutes with natural release for 10 (then manual release if necessary after that.) Stir and add additional salt to taste. Serve with limes to squeeze over, some cilantro and avocado of course. 

Makes about 10 cups

Chocolate Covered Cherry Smoothie

Hey so if you didn't know - I'm allergic to two things and it sucks because vegans love these two things: bananas and cashews. WTF, right?! So I make all of my smoothies without bananas and all of my nut sauces without cashews (almonds work great so whatever, I'm happy!) Of course replacing bananas in recipes is near impossible. IT IS NOT FUN. So could this be even more crazy creamy delicious with a banana? Probably. Go find out for yourself. The truth is, it was super delicious anyway and the ice + almond milk combo turns out pretty dang creamy. Ya learn to live with inconveniences like this and make substitutions. 

Chocolate Covered Cherry Smoothie

Chocolate Covered Strawberry Smoothie
(2 servings)
2 cups sliced strawberries 
2 tbsp cocoa powder
8 ice cubes 
1 cup greens (Kale spinach) 
1 cup almond milk
Sweetener of choice to taste 
Blend the heck up and serve! My 4 year old was trying to lick the jar afterward (doesn't work so well...)

 

-2 WW points per serving - ***There is some debate on how to calculate points for smoothies because it is usually just blended up fruit and vegetables. This was how it calculated in the recipe builder. If you want to just do simple addition for the points here then it would be 2 points for the whole smoothie instead of for half. Do what works. :)

MY Favorite Hummus

My Favorite Hummus - 1 ww point per 1/4 cup

This is just a recipe for my own personal favorite hummus. Tasting many brands of hummus you learn two things - there is no single recipe for hummus and other people may not like your favorite kind. So you may end up liking more lemon, less lemon, more cumin, less cumin, etc but overall this is my favorite so ya know.. try it.  Then adjust to your tastes! Except don't leave out the tahini. Hummus without tahini sucks, I realized.

My Favorite Hummus

3 cups cooked garbanzo beans
2 & 1/2 cups water
juice of 2 lemons
4 cloves garlic
3 teaspoons cumin
1/4 cup tahini 
salt to taste (I cook my beans with no salt so I add over a teaspoon to this recipe. You'll probably want to start with less then add more.) 

Now a fancy trick I learned from the internet to get the smoothest most awesome hummus is to heat up your beans and water in the microwave (or I suppose stove) before blending. I let it go for about 5 minutes (the beans, water and garlic.) Then proceed. Blend everything together in your trusty blender. NOW I KNOW WHAT IS GOING TO HAPPEN... you're going to freak out. I did. I freaked out. TOO MUCH LIQUID I THOUGHT! AGHHH!! But after about 40 seconds in my high speed blender it started to get thick. In fact so thick that it started to stop and I knew it was done. It then thickens up even more in the fridge. Trust me. It will work. If not, you now have a ton of awesome dressing.  Hahha.

The Knockout Green Smoothie

The Knockout Green Smoothie

Mama is sick. Baby is sick. Time to bust out my current favorite green smoothie: The Knockout.

The Knockout 
2 peeled oranges
1.5 cups greens (Kale spinach chard)
1/2 apple
Juice 1 lemon
12-14 mint leaves
1-2 tbsp grated fresh ginger 
8 ice cubes

Blend up using the juice button on your Blendtec or just until totally smooth on whatever you've got.
