Vegan Pumpkin Spice Latte

Hey there! In case you didn't know - Starbucks Pumpkin Spice Latte? STILL NOT VEGAN. Contains dairy (and artificial flavors!) even if you order it with soy milk. So poo. Whatever.

Here's an easier, cheaper, better latte that will rock your mornings. And evenings, if you're into that thing! DUDE. And it's vegan. So there. I've figured out something that company couldn't! (Winning!)   Also, I made pumpkin spice hot chocolate for the wee one (as seen drinking it heartily below!) And that was very very good... mmm... 

Alright, I know you're dying for the recipe and the super spectacular drawings! Be nice, it's my first finished manga style drawing ... ever! Enjoy and drink the heck outta that latte, friends!

Mix Together: 

1.5 cup non dairy milk 

1 cup water

3 tbsp pureed pumpkin

1/8 tsp ground ginger

1/4 tsp ground cinnamon

1/8 tsp fresh grated nutmeg 

1/8 tsp ground cardamom (optional) 

1 Tbsp vanilla

1-2 shots espresso 

(or 1/4 cup strong coffee)

1-2 Tbsp sweetener (or to taste)

 

Heat until just steaming. Blend until nice and frothy. Makes 2-3 servings. 

 

For hot chocolate omit coffee and add 1/4 cup vegan chocolate chips. 

 

A few notes: You can use whatever sweetener you like. You can use those packets of instant coffee instead of espresso. You can blend it using whatever blender you have. Or even a whisk to froth it!
