Delicious Vegan Blue Corn Muffins

These are freaking amazing and easy as heck! Trust me and make them. Blue cornmeal is not necessary but I bet you'll love it!!!

Delicious Vegan Blue Corn Muffins
1 cup flour (all purpose or whole wheat pastry)
1 cup cornmeal (buy blue cornmeal here if you like but yellow works just fine!) 
1 tsp salt
1 Tbsp baking powder
1 cup soy or almond milk
1/2 cup water
1/4 cup maple syrup
1/4 oil or applesauce

Preheat oven to 375 degrees. Line a muffin pan with liners (these are the best - I hate the patronizing company name but they never stick.) 
Mix the first four ingredients together and then pour in the rest. Really it's not hard here. Then divide between the muffin liners (should make 12 and 1/4 cup seems to be a good measure for this.) 
Bake for 23-28 minutes or until a toothpick comes out clean from the middle! 
Serve up with some yummy earth balance and some maple syrup maybe. Or eat them plain right out of the oven - they are perfect just the way they are.

4 WW points each using oil or 3 WW points using applesauce
