(note: this is a lost recipe - I can't believe it never got posted! This stuff is ultra delicious and fun to make in your blender! If you don't have a high speed blender (and even if you have one you kind of need this Twister Jar on the Blendtec to move the butter around...) you can use a food processor. It will take longer but the results will still be wonderful.)
I made this using my wonderful Twister Jar from Blendtec! I love this thing because I can make super thick things like hummus and nut butters easily. It has a special lid that you use to stir the mixture while blending. I also use the Twister Jar for making smaller batches of stuff (okay or when my bigger jar is dirty!)
And of course you can make all sorts of nut butters. I really wanted to try to make something I COULDN'T get at the store though so pistachio butter it was! While I was at it I added some orange zest because it seems like they just go together perfectly. It was a delightful match, for sure!

Orange Vanilla Pistachio Butter
- 2 cups roasted shelled pistachios
- 1 teaspoon (packed) orange zest
- 1 teaspoon vanilla extract
- 1 - 2 Tablespoons of agave or maple syrup, optional
Blend up until nice and smooth in a high speed blender (like a Blendtec!) or a food processor! It may take a couple of minutes total depending on your nuts. Just let it rest every 50 seconds or so as to not heat up your blender or your nut butter!
Eat on crackers, stirred into oatmeal, on a piece of toast, in cookies, or whatever else you can dream of!!
