Pomegranate Champagne Cocktail

Pomegranate Champagne Cocktail

Alright this is the second (and last for now!) fancy drink you can throw together for a special occasion (Valentine's Day! This will be my birthday drink too!) It's really just a simple mix of pomegranates and Champagne but since pomegranates have such a great complex flavor it's really all you need!

Read through all of the directions before you start and you should have this ready in no time. You will really be looking special if you bring this with the vegan Chocolate Waffles to your sweetie for breakfast! Trust me, I would be smitten!

  • 2 fresh pomegranates
  • 1 bottle chilled Champagne or sparkling white wine

First you need to open up those pomegrantes and get the arils (seeds) out! There are a million methods to do this. You can whack it (makes a huge mess for me!), this is a bit better or in water. So far I have had success just sticking my knife into the bottom of the pomegranate, twisting it to open the whole thing up and then tearing it into sections to remove the seeds.

Next you are going to take 3/4 of the seeds you got out and make some pomegranate juice (set the rest aside for adding to the drinks whole.) It's not as hard as it sounds though - just follow along with the tutorial I'm linking to and it should be fine! Here is a WONDERFUL tutorial on juicing a pomegranate - it really is delicious and worth it! If you're totally strapped for time, or just don't want to bother you can buy pomegranate juice in the grocery store. It doesn't taste very much like fresh juice though so you owe it to yourself to try it at least once!

For every Pomegranate Champagne Cocktail you make you are going to follow this easy formula - 1 part pomegranate juice to 5 parts champagne. So 1 oz juice to 5 oz champagne. Then toss in a tablespoon or more of whole pomegranate arils. I pour the juice into the bottom of the glass and top with the champagne for a layered effect. My favorite thing about the drink (other than it's good taste and looks!) is that the pomegranate arils dance all around because of the Champagne. It's just beautiful!
