Veggie Split Pea Soup in the Pressure Cooker

I got a new Instant Pot Electric Pressure Cooker yesterday and I made my first thing in it - SOUP! Truth be told I was totally intimidated by the thing and was telling my friend I was afraid I was going to blow something up (you can't really do that with these electric do-dads.) She told me to just make her vegan split pea soup because it's so dang easy. I took what she said and added onions because she hates them. WELL not just because she hates them but because she hates them and I don't. Hahhaha! ONIONS! Hey maybe I should make an onion soup in here.. hmmm.. although I did notice it made the thing smell like onions even after I washed it. Anyway - good soup, super filling and perfect on this wet grey day.


Veggie Split Pea Soup in the Pressure Cooker

1 lb split peas, rinsed and checked over for rocks and debris 
8 cups vegetable broth
1 smallish/medium head of cauliflower, chopped
3 carrots, chopped
2 stalks celery, chopped
1/2 large onion, chopped (leave this out if you hate onions!)
2 cloves garlic, minced 
1 tsp thyme
salt to taste 

Turn on the saute function on your instant pot and saute your onion in either a bit of oil or some water for a couple of minutes until softened.
Throw all of the remaining ingredients in your pressure cooker with the onions and press the Soup button then change the time to 16 minutes (pretty sure you could also do this on manual --> high --> 16 minutes) So from what I gather, times will vary based on your elevation so play around with it. I've seen recipes for split pea soup being cooked in as little as 8 minutes. I thought this was perfectly soft, cooked and delicious so i'm happy with it. Anyway once it's cooked stir it up, add salt to taste and enjoy. You could always blend it with an immersion blender if you like a smoother soup. Up to you! 
No pressure cooker yet? Throw it in the crockpot for 8-10 hours or cook on the stove for probably close to 2 hours.
