Since discovering the overnight oats on Oh She Glows I feel like I have finally found my regular breakfast. It’s so beautifully easy and there are a million possible combinations like Double Chocolate Berry or Mango Lassi even!
The Almond Berry Variation is the easiest I’ve made so far and it turned out delicious (not to mention BEAUTIFUL! I love eating beautiful foods, don’t you?!)
I kind of over toasted a few of my almonds here but they were still good so no harm, right?! I’m not one to waste a perfectly good food just because it’s a little darker than it should be. (I tried to tell myself that when I burnt an entire huge batch of peach jam. I tried to call it caramelized. Really, it just tasted like an ashtray on an orchard and in the garbage it went! Haha!)
Sometimes I leave the almond butter out and it’s still delicious! (Sometimes you just don’t need all of those extra calories, ya know?)
Look at that! So purple!!! I get my mixed berry blend at Trader Joe’s and it has blueberries, cherries, blackberries, raspberries and maybe something else I don’t know because I ate it all. I’ll double check when I get another bag. If it was fresh fruit season I would be using fresh for SURE!!!! If you haven’t read, I am dying for summer again. BRING ME THE FRESH PRODUCE!
Ah well. At least I can still get frozen.
serves 1 (it’s a big serving!)
- 1/2 cup rolled oats
- 1 Tablespoon chia seeds (Nutvia Organic Chia Seeds are my favorite. I can sometimes find them at Costco too!)
- 1/2-3/4 cup soy, almond, or oatmilk (or your favorite non dairy milk)
- 3/4 teaspoon almond extract (a high quality one like this!)
- 1 Tablespoon almond butter, optional
- 1 cup frozen mixed berries, thawed slightly
- 2 – 3 Tablespoons toasted chopped almonds
- Stevia to sweeten, if desired
Before bed – The mix the rolled oats, non dairy milk, chia seeds, almond extract, almond butter (if desired) and stevia (if desired) together in a jar (or other container.) Cover it and stick it in the fridge.
When you wake up the overnight oats will be nice and thick!
Layer your parfait together alternating the frozen fruit and overnight oats. Top with the toasted chopped almonds.
If you stir it together you will get a BEAUTIFUL red purple oatmeal treat! Dig in and enjoy!
