Breakfast Pizza with Shiitake Bacon and Tofu Scramble (vegan!) — Fo Reals Life

I had this sudden urge to make a breakfast pizza and I’m so damn happy with it that I’m going to have to make it again. We served it with hashbrowns on the side but ya know what.. I think you could put some on top and it would be epic. Why the hell not?!

A thousand apologies beforehand about this recipe – its all over the place but you will be able to figure it out. You have to make a few things to make the thing so just bare with me here.1 premade pizza crust – either store bought or homemade and parbaked. 

Shiitake Bacon
(this makes just enough for one pizza. Double it if you want more around!!)

2 cups sliced shiitake mushrooms (about 1/4 lb)
2 Tbsp reduced sodium tamari or soy sauce
1/2 tsp pure maple syrup1 tsp oil 

1 tsp liquid smoke

Preheat your oven to 350 degrees. Mix the mushrooms with the rest of the ingredients and spread out onto a parchment or silpat lined baking sheet.Bake for 15 minutes. Flip (or stir) and bake for another 10 minutes. If it is all going on the pizza take it out now and let it cool. If you’re going to use it for something else stir them again and then bake for another 5-10 minutes.  

Tofu scramble

1 package mori nu silken tofu1 Tbsp nutritional yeast3/4 tsp salt1 Tbsp water

1/2 tsp garlic powder 

Smash all of this together with your fingers. Do not blend or use a food processor. You just want a chunky texture with everything mixed up. Set aside. You will only be using 1/2 of this mixture on the pizza. Have the rest on some toast tomorrow. 

Gravy (it’s this recipe but only 1/8th of it) 

1 cup soy milk2 Tbsp rice flour 1/2 tsp salt1 tsp rubbed sage1/4 – 1/2 tsp black pepper2 tsp nutritional yeast 

Whisk everything together in a small pot over medium-high heat. Cook until thickened. Make sure you are stirring it while cooking, it should only take a couple of minutes to thicken up. Spread over your pizza crust. 


Heat your oven to 410 degrees. Now take 3-4 handfulls of wilted spinach, chopped (I just microwave it for a minute) and spread it over the gravy topped pizza crust. Top with some of the shiitake mushrooms and the tofu scramble. Bake for 12-18 minutes or until the crust is crusty and the pizza is hot all over. Take it out, sprinkle with some chopped up onions and chives then eat it!!!! Using the crust that I have it is 3 ww pts per slice (1/8th of the pizza)
