Burrito Pizza:Less Than 6 Ingredients Recipe — Fo Reals Life

I love pizza. I love how simple it can be or how complex it can be. I love that it can be anything you want, really.

I used to love to get this pizza that had beans on it as a base when we went out to this place where I used to live. It’s funny because this is almost a combination of two wonderful foods: the burrito and the pizza. I guess I that is why I’m going to call it a burrito pizza. unny name, yummy pizza.

Using Lavash (a flatbread) as crust has several benefits here: it cooks SUPER FAST, its easy as heck and since they are so thin they are low calorie (just a bonus that means you can eat the whole thing by yourself if you want!) You can always buy a premade pizza dough or use your favorite instead of lavash. You will just have to tweak the cook time.

Now once you’ve tried it you can go crazy with toppings – I love potatoes on a pizza but maybe you want to put some roasted carrots or a huge handful of kale on there or cover the thing in taco sauce. Pizza (and Burritos!) are really easy going like that.

Plan on making another one or two if you are feeding more than 2 people. 

serves 1-2

  • whole wheat lavash bread
  • 1 medium *cooked potato (you can microwave it for about 3 min to cook)
  • 1/4 cup corn (fresh or thawed frozen)
  • 1 cup fresh salsa (preferably with chunks of tomatoes, onions and peppers!)
  • 1/2 can refried beans (fat free vegetarian) 
  • 2 Tablespoons chopped cilantro (optional)

Heat up your oven to 425. You can use a regular sheet pan or a pizza stone for this but it doesn’t really matter either way.

Precook your potato and cut it into chunks leaving the skin on. Mix the potatoes with the salsa and set aside. 

Spread the lavash with the refried beans and top with the potato and salsa mixture. Sprinkle the corn on top.

Bake for 5-10 minutes or until the lavash is crunchy and just lightly browning around the edges. Take it out and sprinkle with the cilantro.

Sit down and eat up! This is a fun and quick lunch that my daughter and I love to share.
