In case you didn’t know I LOVE mashed potatoes. I love potatoes in general. I’m pretty sure that most vegans love mashed potatoes. Or just anyone loves mashed potatoes.
When they are filled with yummy flavorful veggies and seasonings they are infinitely more healthy than any you could find drowning in cream and butter. That’s that yucky stuff that gives potatoes a bad name. I’m here to say – KNOCK IT OFF! LEAVE THE POTATO ALONE! Give it some healthy flavorings and it’s a crazy good part of your diet. It’s a main staple in my house because it’s filling, nutritious and cheap! So make a huge pot of this and sit on down. Your mouth and tummy will thank you (if they could talk. Well I guess your mouth can talk but that’s if you think for it. So I guess if they could talk and both had brains. That just sounds crazy now, doesn’t it?!)
- 10 medium red potatoes, washed and diced
- 1/2-2/3 cup non dairy milk (soy, almond, rice, etc)
- 1 (4oz) can roasted green chiles
- 1 cup corn (thawed if frozen)
- 2 cloves garlic, grated with a microplane or minced very fine
- salt and pepper to taste
- 1/4 cup minced cilantro to garnish, if desired
Bring a large pot of water to boil and add the potatoes. Boil until fork tender. Drain the water off and add in the non dairy milk, chiles, corn, garlic, pepper and salt to taste. Mash up with a potato masher or a fork. Add more liquid if necessary. Enjoy!
