Hey, you! I bet you need ANOTHER hummus recipe, am I right?!
Well, I do. Because I bought a billion (okay more like 20) pounds of sweet potatoes and I need to do all sorts of things with them. And being vegan you know I had to make some sort of hummus!
And yeah I ate them on sweet potatoes. Why not? And this super awesome low fat hummus is extra great because it has no tahini or oil. So it’s actually The McDougall Program for Maximum Weight Loss friendly! Which is great because I don’t know about you but I’ve been overindulging a bit already this holiday season. I need to get back to eating whole foods, less fats and more POTATOES! Which incidentally is what the McDougall program is all about. So make up a batch and pat yourself on the back for bringing some easy snacks into your life!
You can make this without the chipotles if you want. My daughter didn’t seem to think it was too spicy but everyone has different spice tolerances!
Chipotle Sweet Potato Hummus
- 1 can drained chickpeas (about 1.5 cups)
- 1 cup mashed sweet potato (you can leave the skins on!)
- 4 cloves garlic
- 1/3-1/2 cup water
- 1/4 cup cilantro (or parsley)
- juice of 1/2 lime
- 1/4-3/4 teaspoon chipotle powder OR 1-2 chipotles in adobo
- pinch of salt
Put everything into a food processor and blend until very smooth. Start with 1/3 cup water and add more if necessary. Then at the end add any additional salt, lime juice or chipotle to taste.
