Collard Green, BBQ Jackfruit and Mango Salsa Stuffed Sweet Potatoes — Fo Reals Life

You made some awesome Jackfruit Sliders and maybe you SOMEHOW have some leftover. Or heck, you don’t wanna eat that stuff on a bun.. what to do.. what to do… How about this. Make the most delicious stuffed sweet potato around!  

These were so good that I ate it several times in a row. I don’t feel bad about it at all either!!! It’s has a great starch (sweet potatoes!), collard greens, jackfruit and mango! It was a perfect lunch (and then dinner and breakfast all in a row for me! Haha!

I cook my sweet potatoes in my big ole slow cooker (recipe here!) so the skin is soooo soft and tender that I eat that too. Talk about a ton of nutrients! 

Cook your sweet potatoes! Either cook them in the crockpot (here’s how and it’s the BEST!!!) or poke with a fork and bake them in an oven at 375 for about an hour or so. Don’t forget to put them on a lined baking sheet because it can get messy.

Meanwhile wash your collard greens and remove the stems. Chop into bite sized pieces. Now get out your steamer (my favorite is my flexible silicon one!) and place it in a pot with water filled up to right underneath it. Place the pot on the stove, add the greens and bring the water to a boil. Once boiling put on the lid and turn the heat down to medium low. Steam the greens for about 10 minutes. Once done take them out and let them cool until they are cool enough to handle. I like to squeeze any excess moisture out so that they don’t get my sweet potato all soggy! You can just do this with your hands over the sink. 

Now cut your cooked sweet potatoes in half. Put a nice thick layer of greens on top of it. Add a big heaping serving of BBQ Jackfruit and top all of that with Mango Salsa. 

Get your fork and dig right in! Enjoy!
