There’s this place that I used to live by that makes the most amazing vegan breadsticks (and pizza) ever. It’s Sizzle Pie, in case you are wondering. I know, how can breadsticks be so amazing? It’s just pizza dough, right? But it comes with DIPS! Several! And you get to choose. And they are all fattening and lovely. I can’t stop craving those breadsticks so now I decided I need to make them at home. At least then I can control what goes on them and the dips. (Mine are not slathered in oil which is a really good thing…)
One breadsticks-for-dinner-night I made this super easy lemon artichoke dip and it was a huge winner! The neighbor came out while I was taking pictures and even she liked it. You can serve it warm, room temperature or cold. You can spread it on a pita sandwich. You can eat it in a house. You can eat it with a mouse!
Or you can just eat it with tons of straight out of the oven breadsticks. Like I do.
- 1 can artichoke hearts drained (or about 2 cups frozen thawed)
- juice 1/2 lemon
- zest of 1 lemon
- 4 cloves garlic
- 2 teaspoons miso paste (white or red)
- 1/4 – 1/2 teaspoon black pepper
- 3 Tablespoons chopped parsley
- 1/4 cup water
Blend everything together until it is to your desired consistency I liked it a little bit chunkier but pureed is just as delicious! Add any additional salt to taste if necessary (but the miso is plenty salty!)
Serve cold, room temperature or warmed up. You’re the boss!
