Fennel Grapefruit Salad Simply Healthy

I’ve probably complained about not being a salad person before. Oh yeah I said that HERE. And here. Well, I guess I can quit talking about that. Just don’t ever expect to see me order a salad at a restaurant because they just don’t come like this usually!

This is a perfect winter sweet and savory salad. I happen to LOVE fennel. It’s something that most of us did not grow up eating though so it make take a few bites to really get into it. That’s okay. This salad is a perfect intro (or reintroduction!) to sweet anise flavored fennel. My kid even loved it, though I wouldn’t necessarily call it a kid meal. 

My favorite part was how simple the ingredients are and how much flavor just came from the whole foods, rather than adding a ton of other stuff. I especially love that I can control my own ingredients and make it oil-free! The Mr. looked at me and said “Why do people even add oil to salads like this?!” … I just shook my head. After you go oil free, you just can’t understand why someone would ruin something so delicious with oil! 

Oh and it’s crazy easy. If you have a mandoline slicer or slick knife skills it goes together in just a couple of minutes. Just don’t try to be really fast with that mandoline and cut yourself. Blood and salads rarely mix well. (Oh did you know they have cut resistant gloves for accident prone people with mandolines? Yeah I didn’t either before I cut myself. Then I learned!) 

Our cat Pickle wanted some yummy salad too!

(serves 4)

  • 1 fennel bulb, cored and sliced thin
  • 1 apple (I like fuji apples), cored and sliced thin
  • 1 & 1/2 cups grapes, sliced in half
  • 1 large ruby grapefruit, peeled and sliced or segmented
  • 1/3 cup grapefruit juice
  • 2 teaspoons miso (Any kind will work. Chickpea miso if you are soy free!)
  • 1 teaspoon fresh grated ginger, optional but delicious! (I use a microplane to grate my ginger!) 
  • some of the leafy fronds from the fennel minced up, optional
  • black pepper to taste

Mix the grapefruit juice, miso and ginger together. Toss it with all of the other ingredients in a large bowl. Add some black pepper and eat up! Now that was EASY, wasn’t it?!
