Healthy Vegan Fudge Pops – Simply Healthy — Fo Reals Life

After making the Healthy Chocolate Pudding I was asked if it could be frozen into a nice cold treat. Heck yeah, I had to try it! I was not at all disappointed, though I braced myself for the possibility. I wasn’t sure how frozen sweet potatoes freeze as far as texture goes but it turns out that it’s awesome!  I bumped up the amount of cocoa and sweetener I used because cold dulls flavors in your mouth. It’s still just as easy as the pudding and possibly even more satisfying. 

And I know, I’m crazy, but I always crave sweet frozen vegan treats in the winter. I think it has to do with me trying to pretend it’s still warm outside – if I close my eyes tight enough and eat these by the heater I am transported to a warm sunny summer day. A huge bonus is that these are so simple and healthy that they are entirely guilt free! Go ahead. Eat two. You just know I’m going to be making loads of these this summer!!! 

  • 2 cups smashed baked sweet potato – skins left on (I bake them in the crockpot and the skins are super soft and easy to blend)
  • 1 & 1/2 cup almond, soy, or oat milk (TIP – We always get our little boxes of soy or almond milk and pour them into a larger pitcher and then add as much water as there is non-dairy milk – cutting the calories and fat by half. We did this slowly so that we would get used to the taste. Now that’s just the way we do it! It saves money, too!) 
  • 1/2 teaspoon cinnamon
  • 6-7 Tablespoons unsweetened cocoa powder OR carob powder!
  • Stevia to taste* (I love liquid stevia like this one or the one that they carry at Trader Joe’s.)

Blend everything together until it is really really smooth. Make sure you add a bit of extra sweetener because cold dulls flavors. Pour into pop molds (or little paper cups!) and insert the popsicle stick. Freeze for at least 3 hours or until hard. Unmold your pops, THEN… EAT!!!!!!! I found that they had the best texture after they had been sitting out for a couple of minutes. 

These are the ice pop molds that we use. I LOVE the classic shape of them the mold is really high quality. They also have fun shaped ones like these rocket shaped molds, these push-up pops or these ice cream cone shaped ones. 

*If you just hate stevia you can add some regular sugar or maple syrup to taste. Try to use less of these because sugar makes it freeze to a softer consistency.

I let my 3 year old have one for breakfast and I was deemed the coolest mama ever. She was eating sweet potatoes though – YAY!
