Maple Roasted Apples and Butternut Squash — Fo Reals Life

Is anyone else already thinking about what to cook for the holidays this year? I meant for this to just be my super yummy warm breakfast but it ended up tasting like the PERFECT side dish for the holidays! It works both ways really.  

You only need a few ingredients to throw together this simple but really delicious dish. And you know what? My kiddo LOVES it!  (But hey she’s a great eater.) 

It actually kind of reminded me of eating warm pie for breakfast. That’s a breakfast I can live with!
So if you’re already thinking about making a healthy plant based (vegan!) holiday dinner this year you might want to include this one. It’s a seriously easy and healthy crowd pleaser!  

  • 6 cups cubed butternut squash
  • 4 cups chopped apples (2-3 large apples)  
  • 2 teaspoons cinnamon
  • 1/4 cup maple syrup
  • 1/4 cup finely chopped pecans

Preheat your oven to 400 degrees. Toss the butternut squash, apples, cinnamon and maple syrup together in a large bowl. Pour into a large baking dish (I used a 9×13 casserole dish.) Bake uncovered for 30 minutes. Stir and then top with the pecans. Bake for an additional 10 minutes.  

Serve with oatmeal, as a side dish, with some yummy vegan vanilla ice cream or just eat a big bowl of it for breakfast!
