I wanted to make a quick note for you on how I roast my squash. You can do this with any squash but you’ll have to adjust the time. It’s crazy easy!
Turn oven on to 425º . Wash your squash and prick with a fork all over. Place on a baking sheet. Throw into the oven (don’t worry about preheating.) Cook until totally soft (90 minutes to 2 hours.. maybe even longer if you cook a Sweet Meat squash or something huge!) For a butternut squash you should be able to easily slip a knife into the top dense portion. It should slip right in! Take it out, split in half and scoop out the seeds. You can easily scoop the flesh out or even peel the skin right off! Easy!!!
