Nutty Black Bean Sriracha Noodles — Fo Reals Life

Sometimes inspiration is just lurking in your pantry on nights where you can’t think of anything to make for dinner. This was one of those nights and I loved this dish! We mixed with with a lot of vegetables right before serving and my daughter ate a whole bunch of it.  

Feel free to add as much sriracha as you like. I’ve been keeping my levels down lately because my daughter has started to become more sensitive to it. That kid use to pour sriracha on her plate and now she says it makes her tongue burn! Oh well – I can’t win at everything, right?!  

  • 1 lb spaghetti
  • 1 can black beans (do not drain) 
  • 3 Tablespoons peanut butter (or almond butter would work)
  • 3 Tablespoons sriracha
  • 1 Tablespoon low sodium soy sauce or tamari
  • 3 cloves garlic
  • juice of 1 lime
  • 1 teaspoon sugar
  • cilantro, chopped green onions, chopped peanuts, etc to garnish

Bring a pot of water to boil and cook your spaghetti until al dente.  

Blend all of the remaining ingredients together using a regular blender or your immersion blender. If it needs to be thinned out a bit add some water a tablespoon at a time.   

Mix the sauce with the pasta and garnish. Feel free to add vegetables to the pasta dish or just serve along side your favorite veggies.
