There is just not enough good ranch flavored stuff when you’re vegan. At least no crunchy yummy ranch things – like chips. But hey I’ve figured out something better we can ranch up: roasted chickpeas! You may end up wanting to double or triple this recipe. Especially if there’s anyone besides you around because I ate these up in a FLASH!
Or better yet make a batch of these and a batch of the sriracha chickpeas. You can have a handful of spicy ones and cool your mouth down with a handfull of ranch ones!!!
- 2 cans chickpeas drained and rinsed (about 3 cups)
- 1 teaspoon onion powder
- 2 teaspoons garlic powder
- 1/2 teaspoon dried dill weed
- 1 teaspoon dried parsley
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- juice of 1/2 lemon
Preheat oven to 400 degrees.
Toss the chickpeas in the lemon juice and place on a parchment lined baking sheet.
Mix all of the remaining ingredients together in a large bowl and set aside.
Bake for 30 – 45 minutes or until nice and crunchy. Make sure you stir the chickpeas around every 5-10 minutes.
Toss them with the dry spice mix while hot and enjoy!!!!
