So we have some garden space and in that we combined plants with our family. We didn’t really do a great job keeping track of what was what. When this weird squash was growing in the garden we kind of didn’t know what the heck we had grown. I looked it up and it was delicata squash! Oh yeah, I kind of remember buying that now.
Anyway I roasted them up and my child was just SMITTEN with them! Love love loved them! She was so excited to be eating “rainbows” and on top of that they are sweet and creamy. Yum.
The cool thing about delicata squash is that the skin is thin enough to eat – no peeling. Just slice and bake. It’s super easy and really delicious. Plus they look like rainbows. What’s not to love?
