I’ve been making a lot of vegan burgers at home lately. Mostly because they can be quick, simple and super filling. Serve with a side of freezer fries and you’re done!
I picked up a copy of The Starch Solution by Dr. Mcdougall after seeing him at VegFest in Portland last weekend and read through the whole thing on the bus ride home. I saw a recipe in there that inspired this one. If you haven’t read that book yet I HIGHLY recommend it! And if you ever get the chance to see Dr. Mcdougall speak you’ve got to go. It was very inspiring hearing him. I also got to see Dr. Hans Diehl and fell in love with the guy. He was super cute! (If you’ve seen him you’d know what I mean. Just very sweet and funny.) And what he had to say made me want to go throw up the greasy samples we had been scarfing down at the booths in VegFest. I am feeling fully reformed and INFORMED now after hearing them both. I plan on watching more of their talks online so I can keep myself inspired and motivated.
And it’s not like we don’t get to eat amazing food when we are healthy! I mean look at that burger all smothered in jalapeno ranch with a side of cajun fries… you can’t tell me that plant based eaters are suffering in anyway. If anything, my diet is so much more colorful and delicious than it ever was when I was eating the SAD way (Standard American Diet. )
- 1/2 cup chopped bell pepper
- 4 chopped green onions
- 1/4 cup chopped hot peppers (such as jalapeno – optional)
- 1/2 cup corn
- 1 can kidney beans, drained and smashed with a fork
- 1 Tablespoon taco seasoning (my favorite is from Trader Joe’s)
- 1/2 cup masa harina flour (Bob’s Red Mill has no-gmo masa)
- 1/3 cup water
Preheat your oven to 375 degrees. Line a baking sheet with parchment paper.
Mix everything together in a bowl. Cover the bowl and chill for 15-20 minutes.
Shape into 4 patties and bake on the parchment lined baking sheet for 15 minutes. Gently flip them over with a spatula and bake for an additional 15 minutes. Let cool for several minutes (this will help them firm up a bit more as well!)
Serve with Jalapeno Ranch, tomatoes, hot sauce, avocado, lettuce or whatever your favorite condiments are!
*Gluten-Free – make sure you use a gluten free taco seasoning blend.
