Vegan Chocolate Whole Wheat Waffles! (Plant Strong!) — Fo Reals Life

Looking for the perfect special breakfast for Valentine’s Day? Or maybe a birthday? First day of school? Maybe to say you’re sorry for being a jerk yesterday? Or maybe to celebrate your success in the 28 day Engine 2 Challenge?!  Whatever the occasion, I’m sure chocolate waffles will be a beautiful and delicious way to celebrate it. These were so good that they were just perfect topped with some Homemade Unsweetened Vegan Yogurt with just a drop or two of stevia in it (you can of course try to find some WholeSoy yogurt at your local store instead!) and some fresh raspberries. I imagine strawberries, cherries or really any fruit would be delicious on these. Even a touch of maple syrup if you have to have it would be amazing on these. 

Make an EXTRA special treat for your kids and use a Mickey Mouse waffle iron (or some kids that you like. Or yourself. Or maybe a silly partner!) My daughter would flip if I gave her a chocolate Mickey Mouse waffle (next birthday breakfast for sure!!) 

I love that these are whole wheat but you honestly cannot even tell. It feels so decadent for a whole grain waffle! Now trust me when I say that white whole wheat flour works best for these – it’s finer than many other whole wheat flours and just holds up in structure better than whole wheat pastry flour.

For Valentine’s Day I’m posting a special adult cocktail to serve with this for the perfect fun adult breakfast – serve with some flavored steamed almond milk for the kiddos! Get your brains working men because you could totally score huge extra points for serving this in bed to someone you love! Way better than flowers! Oh and I know it’s on a Friday.. so drink one after work if you must!

  • 1 cup white whole wheat flour (white whole wheat is softer than regular whole wheat. It makes a difference!)  
  • 1/2 cup cocoa powder (This is my favorite and has a rich deep chocolate flavor. I usually see it at every grocery store in the baking isle.) 
  • 1.5 cups soy milk, almond milk or your favorite non dairy milk
  • juice 1 lemon
  • 1/4 cup sugar or 8-10 drops liquid Stevia 
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Plug your waffle iron in to preheat it. 

Mix the soy milk and lemon juice together and set aside for 4-5 minutes. It will start to curdle slightly and thicken like buttermilk. 

Sift your flour, cocoa powder, baking powder, baking soda and salt together in a large mixing bowl. Add in the thickened soy milk and stevia or sugar.  Stir until combined but its fine if it still has a few lumps – you don’t want to overmix the batter. 

Here’s the waffle iron I use. It takes about 2/3 cup of batter for each waffle and they cook in 7-8 minutes. Yours may use more or less. Make sure to follow the direction included with your waffle iron. 

With the addition of chocolate these become very crispy on the outside while still fairly moist on the inside. Take care when opening your waffle iron so that they don’t “split” (when one side says on the top and one stays on the bottom!) When they are done I like to open the waffle iron just a tad, stick a fork inside to hold down the top edge of the waffle and then open it. I never have a split waffle when I do this!
