Vegan Double Chocolate Berry Overnight Oatmeal Parfait – Simply Healthy Recipe

That is a crazy long title. It was going to be THAT or “Morning Orgasm” but I figured it wouldn’t go over that well in search functions. In fact, I’ll probably still get a lot of disappointed people that searched for that term and instead find the most delicious breakfast I’ve ever considered eating! 

Seriously, though – I’ve never been into traditional breakfast foods. I hate cooked oatmeal (GASP! Even in my own family I’m an outcast for this.) Well, I mean I do love a good potato hash for breakfast but after 2 weeks or so of those I get tired. And speaking of tired – I don’t always wake up ready to conquer the world! Hey, who knew! This amazing jar of deliciousness really caters to that. It gets ready for you while you sleep!

I can’t even resist something so decadent – it’s healthy enough for breakfast but I’d even happily serve it as a dessert to guests and they would DEVOUR it! Then I would smile to myself (sort of like an evil genius does) because I just served someone some yummy healthy oats, chia seeds, sweet potato, stevia,  berries and cocoa powder. No sugar. No crazy refined grains. Just wholesome delicious sex in a jar. Yeah I said it. 

Makes 1-2 servings depending on how hungry you are when you wake up. (plant strong, sugar free, gluten free [if you get GF oats], soy free and/or nut free depending on the milks you use!)

  • 1 cup Chocolate Sweet Potato Pudding (I recommend making double the recipe and always having some ready for you to eat when you get the craving! Of course that is coming from a chocolate pudding addict!)

  • 1/3 cup rolled oats

  • 1 cup Oat Milk (or your favorite non dairy milk like almond or soy) 

  • 1 Tablespoon chia seeds (Nutvia Organic are my favorite and you can buy them here – I can sometimes find them at Costco too!)

  • 1 teaspoon unsweetened cocoa powder

  • stevia to taste (I love liquid stevia like this one or the one that they carry at Trader Joe’s.)

  • 1/2 – 1 cup thawed mixed berries – raspberries were the BEST part of this mix!

If you haven’t made your chocolate sweet potato pudding yet then go ahead and get that out of the way first. 

Before bed – The mix the rolled oats, oat milk, chia seeds, unsweetened cocoa powder and stevia together in a jar (or other container) Cover it and stick it in the fridge.

When you wake up the overnight oats will be nice and thick. Layer them with the chocolate pudding and thawed berries. I did it like this : 1/3 overnight oats, 1/2 chocolate pudding, 1/2 berries, 1/3 overnight oats, the rest of the chocolate pudding, the rest of the overnight oats and then top with the rest of the berries.
