Vegan Pizza! BBQ Tomatillo and Black Bean Pizza

It’s hot in my kitchen. I bet it’s hot in yours too. Or if it’s not who cares, this is still relevant  There are times where you want fast as can be food. I know that turning on the oven heats up the whole kitchen but leaning over the stove cooking something feels far worse to me. I’d rather be able to throw something in for 8 minutes, take it out and get the heck out of there. 

Yeah. I want to get out of my kitchen sometimes too, folks!  

Enter the quick pizza! BBQ pizza even. Which, if you haven’t noticed, I love. My favorite BBQ sauce without all the junk-o-la (corn syrup!) is from Trader Joe’s. It’s a tad spicy though so if you don’t want spicy in your face bbq sauce you can mix in a bit of regular pizza sauce to tone it down. 

And it has the special fun ingredient – tomatillos! They are green and come with paper like skins. You just remove those skins and wash the tomatillos (they are sticky underneath!) If you haven’t had one before they taste really bright and kind of tangy like a bit of lime juice. They are delicious! But if you cannot find them feel free to use some chopped tomato. I won’t know any difference (hehe!)  

Can you believe I actually thought I was going to cook polenta tonight? I could hardly stand in the kitchen for 2 minutes to throw this thing together. I’m so glad I didn’t stand over the stove stirring a pot of hot food for 10-15 minutes! 
Ohh check out my little master food stylist below. She had to adjust the pizza to get it just right. She’s the best. (Really she is. She can do the moonwalk and the robot. What other 2 year old can? AND… she learned it from Futurama. hahhaha!) 

makes 2 large lavash pizzas (super thin crust!)  

  • 2 pieces of 100% whole wheat lavash bread (it’s a really thin flat bread but you could also use pita bread or your favorite pizza dough- just adjust the cooking time accordingly)
  • 1/3-1/2 cup bbq sauce
  • 1/4 cup corn kernels (thawed if frozen) 
  • 1 cup black beans
  • 1/4 onion, diced fine
  • 1 large or 2 smaller tomatillos, diced
  • 2-4 Tablespoons chopped cilantro (optional for cilantro haters!)  

Preheat your oven to 400 degrees.  

While it’s heating cut everything up and spread the sauce on the lavash. Top with everything but the cilantro. Bake for 8-10 minutes. (8 was more than enough for mine!)  Remove from the oven and top with cilantro. Enjoy!
